| Boil up 2 quarts of water, add lentils, simmer for 20 min Chop up 2-3 slices of bacon and fry. When bacon is nearly done, add a cup each of chopped celery, onions, and carrots. Sautee lightly. Dump everything (lentils and sauteed vegetables) into crock pot, add a can of diced tomatoes, salt and pepper, a half tsp of thy,e, and two bay leaves. Also add, if you have them, a couple of rinds of Parmesan Reggiano cheese. Also add 2-3 tbsp of balsamic vegetable. Go to work, come home, dinner is served. |

It isn't so much the simmer, its bring the water to the boil. Its important to get them to that first boil for a minute, then drop the heat. It takes forever for the crock pot to heat water.
