Navy Coffee

Strange Brewer on Aug-02-2009 at 01:16 PM RST @ 207.118.214.54 (Strange Brewer) OK... The coffee is perked (All Navy Coffee is perked) with boiled egg shells (Removes the egg flavor. What you have left is pretty much calcium carbonate. When You make Navy Coffee you are making strong coffee, which tends to be acidic. The egg shelkls buffer the acid, making for better flavor extraction and smoother flavor. Once the coffee is poured, it is poured into a caraffe and the whites from two eggs are added. The coffee is gently stirred and the egg whites agglutinate and sink, taking with them virtuwally all of the particulates. The egg is then filtered through cotton gauze cumshawed from Medical. This removes the egg trub and the egg shells. The resulting coffee is brilliantly clear. Wardroom coffee cups are made of white porcelin and have an anchor and coiled rope logo at the bottom (The set I saw were the personal property of Cap'n Jackson and came from Germany...) The coffee is so clear, you can see the anchor though a filled cup.

It's the best coffee I ever had.
